Ingredients:
1 3/4 cup whole grain red fife flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/3 cup plus 1 tbls sugar
1 1/2 cup fresh strawberries, chopped
1 egg
1 cup buttermilk
1/4 cup unsalted butter, melted
1 tsp vanilla
1 tsp lemon zest
Directions:
1) Preheat oven to 400 degrees F and line a cupcake tray with liners.
2) in a bowl mix together dry ingredients (flour, baking powder, baking soda, salt)
3) in another bowl mix together buttermilk, egg, butter and vanilla
4) in a third bowl, mix strawberries with 1/3 cup sugar, stir well and set aside
5) add buttermilk mixture to the dry mixture and stir to combine
6) fold in the strawberry mixture
7) combine 1 tbls with the lemon zest
8) divide batter between 12 cupcake liners
9) sprinkle lemon sugar on top
10) bake 18-20 minutes
11) let cool on a rack for about 5 minutes
